Ingredients
For the Grilled Chicken Thighs:
- 8 bone-in, skin-on chicken thighs
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Season and Grill the Chicken Thighs:
- Preheat your grill to medium-high heat (about 375°F to 400°F).
- Pat the chicken thighs dry with paper towels. Season both sides generously with salt, black pepper, garlic powder, and smoked paprika.
- Drizzle the olive oil over the seasoned chicken thighs and rub it in to ensure even coating.
- Place the chicken thighs skin-side down on the preheated grill. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the skin is crispy and charred to your liking.
- During the last few minutes of grilling, brush the Pineapple Jalapeño BBQ Sauce generously over the chicken thighs, allowing the sauce to caramelize slightly.
4. Serve:
- Remove the grilled chicken thighs from the grill and let them rest for a few minutes.
- Serve each chicken thigh with a generous drizzle of Pineapple Jalapeño BBQ Sauce, a scoop of fresh pineapple salsa, and warm corn tortillas on the side.
- Garnish with additional cilantro leaves and lime wedges if desired.
